Honey & Co sweet spice mix

This was a recipe I found in Honey & Co, Food from the Middle East, and made out of curiousity.  Although I didn’t have the mahleb seeds it turned out to be delicious in the Spiced (almost) Christmas Stars just as it was.  I’ve also halved quantities because quite frankly I love Christmas Stars, but I don’t make nearly enough to use those kind of quantities of spice all before it goes stale!

Sweet Spice Mix


5 cardamon pods

3 cloves

1/4 nutmeg

1/2 tsp of whole fennel seeds

1 1/2 tsp ground ginger

2 tsp ground cinnamon


Preheat the oven to 190C.  Road the cardamon pods, cloves and nutmeg on a baking tray for 5 minutes then add the fennel seeds and roast for another five minutes.  Remove from the oven and allow to cool completely before grinding (I used a pestal and mortar).  Add the pre-ground ginger and cinnaomon and store in an airtight jar for around 2 months or up to six.
